homemade coleslaw very easily made and quickly..

ingredients: cabbage, 2 mediume size carrots, 1 cup of sugar, 2cups of mayonnaise, 1/2tsp of salt.
1. grade the cabbage into a medium size bowl, the grade the carrots into the graded cabbage, then add the salt, sugar, and mayonnaise and stirr it all up together.

Chicken and corn soup

1/4 lb thin rice noodles, 1 small onion finely chopped, 2tsp canola oil, 1 clove garlic, minced, 2tsp mild curry paste, 2 tsp light brown sugar, 1-14oz can coconut milk, 1 cup of chicken broth, 2 tsp soy sauce, 1-7oz can corn or 1/2 cup frozen corn kernals, 1/2 cup frozen peas, 1 cup shredded cooked chicken, 4 scallions thinly sliced, plus 2 for serving, 2 tsp lime juice, thinly sliced red chiles, and lime quarters for serving
1. cook the noodles according to what it says on the bagand themn drain and divide them omong 4 bowls
2. Saute’ the onion in the oil 5 to 6 minutes, until soft. Add the garlic, curry paste, and brown ugar, and cook 1 minute more. Add the coconut milk, chicken broth, soy sauce. Bring to a broil.
3.Add the corn, peas, chicken, and scallions Simmer for 3 minutes, until everything is hot. Remove from the heat and add the lime juice.
4. Ladle the soup over the noodles and eat immediatly. Serve with bowls extra sliced chilies, and lime quarters so that each diner can help themselves to thier favorite garner. makes 4 servings

black writing icing

Attach cookies for ears and chocolate drops and colorful candies for eyes and noses, using the writing icing as glue. Then use the writing icing to draw a mouth and pupils for the eyes.

1 stick butter, softened
1/2 cup sugar
1 cup self-rising flour
2 large eggs
1tsp vanilla extract
1. Preheat oven to 350… Cream butter and sugar until light and fluffy. Beat in eggs one at a time, blending until smooth between each, with 1 tablespoon of flour. Add vanilla extract and fold into remaining flour.
2. Line a muffin tin with paper muffin cups and fill each halfway.
3. Bake for about 18-20 minutes, or until cakes rise and are firm and springy to the touch… make 8 to 10 cupcakes

red velvet

2/3 cups of milk, 2tsp red food coloring, 1 1/3 cups all-purpose flour, 1 tsp unsweetened cocoa powder, 3/4 tspbaking powder, 1/4 tsp baking soda, 1/4 tsp salt, 3/4 cup sugar, 3/4 stick of butter [6tsp] softened, 1 egg plus 2 yokes, 1 1/2 tsp vallina extract..
Frosting.. 1 1/2 sticks softened butter, 4 oz. cream cheese, softened, 1 tsp vanilla extract, 2 1/3 cups confectioners’ sugar
1. Preheat oven 350. Line a muffin pan with paper liners.
2. Warm the milk 30 seconds in microwave. Add food coloring.
3. Wisk together flour, cocoa, baking powder, baking soda, and salt.
4. Beat sugar and butter together until pale and fluffy. Beat egg and yokes with vanilla; then beat into butter mixture, a little at a time.
5. Beat in 1/3 flour mixture, 1/2 milk, 1/3 flour, rest of milk, then rest of flour. Pour into into paper liners and bake 18-20 minutes.
6. For frosting, beat butter, cream cheese, and vanilla until smooth. Add sugar 1/4 cup at a time. Spread onto cooled cakes. Makes 12 cupcakes.

half stick of butter, third cup of packed light brown sugar, quarter cup of honey, 1 egg, half tsp of vanilla extract, 2tsp applesauce, three quarter cup of self-rising flour half tsp of ground cinnamon, half tsp ginger, quarter tsp salt, decoration- 13oz. white rolled fondant icing, food coloring, black writing icing, 12 almond sciles….
1. pre-heat oven to 350.. fill a muffin pan with 6 paper liners.
2. beat together butter, sugar, and honey until light and fluffy. In another bowl , beat together egg, vanilla, and applesauce. Beat this into butter mixture. Whisk together flour, cinnamon, ginger, and salt. Fold into butter and egg mixture.
3. Divide batter between paper liners and bake for 18 to 22 minutes, until golden and firm. Remove from oven and let cool for about 10 minutes; then transfer to a wire rack and let cool completely.
4. Decorate! Knead a little food coloring into fondant to make a selection of colored fondants. To make bees, shape heads and bodies from yellow icing and gently squash together. Draw bee faces and stripes using black writing icing, and push almond slices into the sides as wings. Cut out flower shapes from pink, white, and lilac icing using mini cookie cutters. Press some sprinkles into the flowers. Makes 6 cup cakes

Cobb Salad

1 ripe avocado, peeled, chopped
1 Tbsp. lemon juice
8 slices Bacon, chopped, crisply cooked
1 bag (10 oz.) mixed salad greens
2 boneless skinless chicken breast halves, grilled, chopped
4 plum tomatoes, quartered
1/2 cup crumbled Blue Cheese
2 hard-cooked eggs, chopped
4 green onions, sliced
1/2 cup Roasted Garlic Vinaigrette Dressing

Toss avocado with the lemon juice, set it aside, mix everything else together, then add the avocado and mix well.

Brocoli-Tomato Salad

6 cups broccoli florets, coarsely chopped
1 cup cherry tomatoes, halved
1 cup Colby & Monterey Jack Cheese Crumbles
1/2 cup thinly sliced red onions
2 Tbsp.
Sunflower Kernels
1 Tbsp. poppy seed
1/2 cup Light Raspberry Vinaigrette Dressing
2 tsp. Dijon Mustard
1 Tbsp. sugar

Combine the first 6 ingredients, then add the remaining and put in the fridg. For at least 4 hours.

Strawberry-Poppyseed Salad

4 cups baby spinach leaves
1 pkg. (8 oz.) Shredded Low-Moisture Part-Skim Mozzarella Cheese
3 cups torn Boston lettuce
1 small red onion, thinly sliced, separated into rings
2 cups strawberries, sliced
1/2 cup Walnut Halves, toasted
1/2 cup Creamy Poppyseed Dressing

Combine and mix everything well.

Strawberry-apple salad

1 pt. strawberries, sliced
1 medium McIntosh apple, chopped
1 medium Granny Smith apple, chopped
2 Tbsp. sliced green onions
2 Tbsp. chopped cilantro
3/4 cup Light Raspberry Vinaigrette Dressing
6 cups torn spinach leaves or romaine lettuce

Mix everything together, adding the spinach at the end.
