Spam breakfast
February 20, 2009
When people think of spam, they usually think is a meal for dinner or lunch, but not for dinner. (or they might be thinking of those emails that flood our bulk mails! Not that kind of spam)
You can make spam for breakfast, too! And its good. Here’s how:
Scramble some eggs in a pan. Add in pieces (like cubes) of spam to the skillet.
When all cooked, remove from the pan and transfer to a tortilla.
Sprinkle with cheese.
If you like, add some chile (green or red) to your burrito.
And eat!
Pair with OJ and a bran muffin.
Greek Pasta Salad
February 18, 2009
I made this pasta salad today and had it in mind since yesterday. I had made an Italian one the day prior but it didn’t satisfy my tastebuds. So I headed down to Trader Joe’s for some MUCH needed supplies. I sure love that store.
This is what I did to make my very own and VERY tasty Greek Pasta Salad:
Boil whole wheat rigattoni until tender.
Drain, then place in a bowl.
Pour ceasar romano dressing over the pasta.
Add in crumbled feta cheese.
Dice up olives in small pieces and add to the mix.
Mix all together!
I like to make large quantities of this and add a lot of each of the mixture to make it extra flavorful. I put them in tupperware containers and pull one out whenever I’m hungry. You can moisten it with olive oil or more ceasar dressing if the fridge makes it a bit dry. It’s soooo good!
A healthy snack with all the food groups.

Here’s a healthy, and easy way to create a healthy snack. It will fill you up and keep hunger at bay as it will keep you satisfied. I like making this kind of snack as a way to reward myself half way through a long night of studying and hitting the books. You need the energy to keep on going and do a good job on your work. Here’s how you make it:
Take a piece of whole wheat bread. Place a generous amount of roasted turkey slices on top. Include green leaf lettuce the sandwich. Take a bottle of Italian salad dressing with low-sugar, shake it and then drizzle on top of the turkey and lettuce.
Add a spear of kosher pickle to the side. Also add a string cheese (lite). I like the cheddar/mozerrella string cheese twist/blend.
Pair with some V8 splash and you got ALL your food groups. (That’s if your bread has nuts or your italian has olive oil)
