Fried Cream Corn

12 Ears fresh corn, shucked

4 Slices thick slab bacon

1/2 Stick butter

Salt and Pepper to taste

Cut corn from cob then slightly mash.

Cut bacon into 1 inch pieces.

Cook bacon in a large skillet until crispy.

Remove bacon from skillet, set aside, add 1/2 stick butter to skillet.

Over medium-high heat add corn to skillet, fry for 5 minutes stirring occasionaly.

Lower heat to simmer and cook until corn is done, 10 to 15 minutes.

Crumble then add bacon back to corn.

Salt and Pepper to taste.

If corn is to dry add a little milk or cream.

Waldorf Salad

1/2 cup chopped, slightly toasted walnuts
1/2 cup celery, thinly sliced
1/2 cup red seedless grapes, sliced (or a 1/4 cup of raisins)
1 sweet apple, cored and chopped
3 Tbsp mayonnaise
1 Tbsp fresh lemon juice
Salt
Pepper
Lettuce

In a medium sized bowl, whisk together the mayonnaise (or yogurt) and the lemon juice. Add 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper. Mix in the apple, celery, grapes, and walnuts. Serve on a bed of fresh lettuce.

Dad’s Potato Salad

Serves: 8

5 pounds red potatoes cubed
1 medium onions chopped
3 stalks celery chopped
6 spears dill pickles chopped
5 eggs hard boiled
1 cup mayonnaise
1/2 cup mustard
Salt
Pepper

Cook potatoes till done, lightly mash leave it a bit chunky. Mix mayonnaise and mustard in seperate bowl, then add to potatoes. Add onions, celery, pickles, and eggs. Mix together. Salt and Pepper to taste. Chill

Dad’s Yummy Breakfast

1 pound sausage
1 medium onion
1 small green bell pepper
2 cups canola oil
5 mediums potatoes
8 eggs

In a small skillet over medium heat brown sausage, add onion and bell pepper, reduce heat to low, continue to cook while preparing potatoes and eggs stirring occasionally.
Heat oil in large skillet.
Peel potatoes and cut into 1/2 inch cubes, carefully add to hot oil, cook until golden brown. Remove from oil and salt immediately.
Let oil cool somewhat, then set heat at low. Cook the eggs in pairs per order,,ie “sunnyside up”, “over easy”……….
Put 1/4 of the potatoes on each plate, add 1/4 of the sausage mixture on top of the potatoes, add the eggs on top of the sausage.
Serve immediately
